Thanks to today’s renewed culinary appreciation, beets have gone from boring cellar food to fabulous feature on restaurant menus and home menus. Make the most of beets by following my easy step-by-step guide for how to cook beets by roasting them below.

The vibrant, deep red color of beets comes from its phytochemical betacyanin, which has been found to have anticancer effects. In addition, beets are a good source of dietary fiber, folate, potassium, magnesium, manganese, and vitamin C—all for only 74 calories per cup cooked. Beets also contain betaine, an amino acid shown to lower inflammation in the body, which has been of significance in improved athletic performance and recovery in recent research. Studies also shows that beets may help fight heart disease by reducing LDL (“bad”) cholesterol and increasing HDL (“good”) cholesterol levels, as well as reducing blood pressure levels.

Step-by-Step Guide for How to Roast Beats

Trim the greens of the beets, reserving them for sautéing later on.
Scrub the beets really well with a vegetable brush, trim bottoms and tops. Do not peel.
Slice the beets thinly with a sharp knife.
Place in a baking dish in a thin layer.
Squeeze one lemon for juice.
Combine lemon juice with 1 tablespoon extra virgin olive oil in a small dish.
Add salt.
Add freshly ground black pepper.
Whisk together with a fork.
Drizzle vinaigrette over sliced beets.
Roast at 400 F for 35-40 minutes, until golden brown.
Stir about halfway through roasting. Remove from oven when done.

Roast beets the easy delicious way. Just wash, slice, drizzle with lemon and EVOO, and roast in the oven until golden brown and yummy. Voila, an amazing side dish!

  • 1 bunch (5 beets) fresh beets, gold, pink or red
  • 1 tablespoon extra virgin olive oil
  • 1 small lemon, juiced
  • Salt and black pepper to taste

  1. Preheat oven to 400 F.
  2. Trim the beet greens and reserve them for later—they are delicious cooked as you would any leafy green. Scrub the surface of the beets with a vegetable brush, trim away rough spots with a paring knife, and slice thinly.
  3. Place beets in a baking dish.
  4. Whisk together lemon juice, olive oil, salt and pepper (as desired) in a small dish.
  5. Drizzle the vinaigrette over beets.
  6. Roast at 400 F on the top rack of the oven for about 25-30 minutes, stirring halfway through, until tender and golden brown. Makes 2 servings.
